I found these lemon almond crinkle cookies at The Slow Roasted Italian and thought they would be perfect for a couple of parties last week. Chad also likes when I find a new cookie recipe that doesn’t include any chocolate. When I was younger, I was not really a fan of lemons in baking, but it has definitely grown on me. I really enjoyed the combination of lemon and almond. Everyone at the events enjoyed them as well.
The lemon is believed to have originated in India. India is also the world’s top producer. In the United States, California is the leading producer of lemons. The most common lemons available in grocery stores in the United States are the Eureka and Lisbon. They are very low in calories, but high in vitamin C and fiber. They help with iron absorption, when eaten with iron rich foods or vitamins. Lemons are also a good source of calcium, potassium, folate, lutein, and zeaxanthin.
