Pasta alla Norcina Rosso is a variation of Pasta alla Norcina, an Umbrian (Norcia) pasta dish made of sausage and cream, with the addition of chopped plum tomatoes. Norcia is located in the mountains of southeastern Umbria. It is famous for its pork and truffles. Even the Italian word for a butcher that specializes in pig is “Norcino”.
Pasta alla Norcina Rosso is an incredibly hearty and satisfying dish that all three of us loved. Evan has been picky with pasta recently, but really enjoyed this. Not a single piece landed on the floor, which is a rarity these days. I used sweet Italian sausage. If you use hot Italian sausage, feel free to omit the red chili flakes (unless of course you love the extra spice).
