I have started making pizzas about once a week. Evan has hit a bit of a picky stage. He won’t eat many vegetables on their own, but will devour them on a pizza or mixed in stir-fries. I have not found a pizza he doesn’t like yet. This Chicken Spinach Pizza is topped with spinach, grape tomatoes, green onions, and chicken slices. I usually make enough dough for two pizzas so Chad has leftovers for work the next day.
I grilled the chicken breasts earlier in the day, so the pizza was quick to assemble at dinnertime.
Chicken Spinach Pizza

Chicken Spinach Pizza
Servings 1 Pizza
Ingredients
- 1 large pizza crust homemade or store bought
- 2 teaspoons olive oil
- salt and pepper to taste
- 1/4 cup tomato sauce
- 2 large handfuls spinach leaves
- 2 cooked chicken breasts thinly sliced
- 10 grape tomatoes halved
- 3 green onions chopped
- 2 ounces Romano cheese thinly sliced
- 1 cup shredded Mozzarella cheese
Instructions
- Preheat oven to 425˚F. Place pizza stone in oven if using.
- Drizzle pizza crust with olive oil. Season with pepper. Drizzle tomato sauce over the crust. Top with spinach, chicken slices, halved tomatoes, and green onions. Season with salt and pepper. Add slices of Romano cheese and sprinkle with Mozzarella.
- Bake on pizza stone or large round baking sheet until crust is golden and cheese is bubbly, 7-9 minutes. Let sit 5-10 minutes before slicing.
