Chile con queso (chile peppers with cheese) is a Texan creation with Mexican influences. It is a mixture of melted cheese, chile peppers, and cream/milk. Other ingredients, such as meat, beans, guacamole, or tomatoes may also be added.
Sophie and Riley turn into little vultures when I break out the grater. They know the sound of grating cheese very well and stay glued to my feet in case any cheese happens to fall off the counter.
There is something about cheese dips that makes them highly addictive and this recipe is no exception. Chad and I had some with tortilla chips in the afternoon right after I finished taking the photos. Around 9 pm, Chad mentioned the dip again and we ended up polishing off the rest of the bag that night. There was still a little dip leftover, so we used it as a topping for the chicken fajitas I made the next day. The chiles gave the dip flavor without being spicy. If you want a more spicy dip, you may have to add more pepper to kick it up a notch.
