Chocolate Chip Cookie Dough Overnight Oats

This Chocolate Chip Cookie Dough Overnight Oats recipe is about as easy as you can get for a make-ahead breakfast!

Rolled Oats are simply combined with milk, yogurt, almond butter, brown sugar, vanilla bean paste, mini chocolate chips, and a pinch of salt and cinnamon.

The mixture is refrigerated overnight (or even less if you are using quick cooking oats!) and ready to go by morning. 

I topped the oats with banana slices, a little more mini chocolate chips, and brown sugar. It is also delicious paired with fresh strawberries or other fresh berries. 

A Few Overnight Oat Tips

Use a dairy or non-dairy milk (such as oat milk).

I used almond butter to add to the cookie dough flavor, but it can be swapped for another nut butter such as cashew or hazelnut. I haven’t personally tried it, but sunflower butter should work for a non-nut butter option.

You can adjust the amount of brown sugar to taste or even substitute with maple syrup or honey (though the brown sugar really helps add to the cookie dough flavor).

Same goes for adjusting the amount of mini chocolate chips to taste.

Old-fashioned, rolled oats are best for this overnight oat recipe. If using quick cooking oats, only allow the mixture to refrigerate for 4-5 hours. The resulting texture will be a bit softer.

Ingredients

  • 1/2 cup (55 grams) old fashioned rolled oats
  • 1/2 cup (120 milliliters) milk dairy or non-dairy such as oat or almond
  • 1/4 cup (60 grams) Greek yogurt
  • 1 1/2 tablespoons (26 grams) almond butter
  • 1-2 tablespoons (12-25 grams) light brown sugar
  • 1 tablespoon (12 grams) mini chocolate chips plus more for topping
  • 1/2 teaspoon vanilla bean paste or vanilla extract
  • pinch salt
  • pinch ground cinnamon
  • Sliced bananas or strawberries for serving

Instructions

  • In a jar or bowl, fold together the oats, milk, yogurt, almond butter, brown sugar, mini chocolate chips, vanilla, salt, and cinnamon.
  • Cover and refrigerate 8 hours to overnight (or 4-5 hours if you are using quick oats).
  • Serve cold and top with sliced bananas, strawberries, a sprinkling of brown sugar, and/or additional chocolate chips if desired.

    I need to try overnight oats. I love oatmeal. I have no idea why I haven’t tried them before. These look so delicious.
