Yesterday, I had a cooking demonstration featuring breakfast dishes at Le Creuset for Mother’s Day. The store is also newly remodeled, so it was great to see the new look! I prepared Arme Riddere (Norwegian Cinnamon Toast) and Kanelplättar (Swedish Mini Cinnamon Pancakes). I topped the Arme Riddere with macerated strawberries and mint sour cream. The mint sour cream was so popular, I also used it with strawberry jam for the Kanelplättar.
I featured Le Creuset’s Crepe Pan for the demonstration. This cast iron pan has a 10 3/4 inch diameter and is coated in a durable black enamel finish. No seasoning was needed and the Kanelplättar cooked perfectly without any sticking. It is compatible with gas, electric, ceramic, halogen, induction, broiler, and oven cooking methods.
As always, Evan loved getting the chance to assist. I made a Landbrød (Danish Country Egg Bread) from the The Great Scandinavian Baking Book the day before as a base for the Arme Riddere.
And of course, a very Happy Mother’s Day to all the moms in my life! Especially Granny, Lola, and Nana Leigh!
