The Irish Crisp Sandwich, Crisp Sambo, is perfect for a quick and easy snack this St. Patrick’s Day. All you need are two slices of bread, some Irish butter (I have seen Kerrygold at most supermarkets lately), and potato chips (crisps). Mairéad of Irish American Mom and The Daily Spud both recommend using Tayto Cheese and Onion Crisps. If you can’t find them, look for chips with a bold flavor. I used white sandwich bread, but a crusty white bread like Belfast bap is also popular.

Irish Crisp Sandwich
Adapted from The Daily Spud
Serves 1
2 slices sandwich or crusty white bread like Belfast bap
2-4 tablespoons Irish butter
~1/2 cup potato chips
Spread generous amounts of butter across the top of each slice of bread. Top one slice evenly with potato chips. Cover with other slice, buttered side down. Smash to your liking and serve immediately.
