This variation of the Mexican quesadilla makes a great meal or snack when you are short on time. I am not a fan of super spicy foods and the poblano chili pepper is perfect to add a little flavor with minimal heat. Versions of the quesadilla found their way throughout North America, from the southwestern United States to Central America. In northern Mexico and the southwestern United States, the quesadilla is prepared using a flour tortilla. Popular cheeses include Cheddar or Colby Jack. In central and southern Mexico, the quesadilla is prepared with a corn tortilla and Oaxaca cheese.
The poblano is a popular chili pepper originally from Puebla, Mexico. The green, unripened peppers are very mild, with a Scoville rating of only around 1,000. The red peppers are a bit hotter, with varying degrees of hotness per pepper.
