These sesame noodles are great as a quick lunch or side dish. Grilled chicken and vegetables (bell peppers, carrots, onions, mushrooms, broccoli) can also be added to make this a one-dish meal. Chad really enjoyed the slight creaminess of the sauce from the peanut butter. Overall, this is a wonderful 15 minute meal to have on hand when there is not a lot of time to cook.
I used Chinese lo mein noodles, but thin spaghetti, soba, or linguine would hold the sauce well too. If black sesame seeds are not available, white seeds can be used. I just like the black sesame seeds, because they stand out more with the light noodles. The taste is mostly the same between the two. Black sesame seeds are slightly more crunchy, because they have not been hulled.
