  • 1 nectarine finely diced
  • 8 strawberries hulled and finely diced
  • 12 cherry tomatoes quartered
  • 2 tablespoons finely diced red onion
  • 2 1/2 tablespoons thinly sliced basil
  • 1/2 teaspoon garlic powder
  • pinch salt
  • 1 Italian country loaf
  • olive oil for drizzling
  • 4 ounces goat cheese softened


  • In a medium bowl, combine nectarine pieces, strawberries, cherry tomatoes, red onions, basil, garlic powder, and salt.
  • Cut the bread on the diagonal in 1/2 inch slices. Place on a baking sheet, drizzle with olive oil, and broil on low until toasted, 2-3 minutes.
  • Spread goat cheese over the toasted slices and top with strawberry nectarine mixture.
  • Serve immediately.
