  • 2 1/2 cups water
  • 2 cups Pearl couscous
  • 2 tablespoons butter
  • 1 tablespoon dried basil
  • 1 tablespoon chopped onion
  • 1/2 teaspoon salt
  • 1/4-1/2 teaspoon crushed red pepper
  • 1 cup halved grape or cherry tomatoes
  • 4 ounces Feta cheese crumbled
  • 1 tablespoon lemon juice


  • In a medium saucepan, bring water to a boil. Stir in couscous, butter, basil, onion, and salt. Decrease heat to medium, cover, and simmer until the couscous is tender, 8-10 minutes. Stir occasionally to prevent couscous from sticking to the bottom and reduce heat if needed.
  • Add cooked couscous to serving bowl. Let cool 5 minutes before stirring in red pepper, tomatoes, feta, and lemon juice.
  • Serve immediately or refrigerate for up to a day in advance.
