Ingredients

  • 1/2 cup unsalted butter softened at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 eggs
  • Zest from 2 limes
  • 2 teaspoons lime juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 ounces white chocolate chips

Instructions

  • Preheat oven to 350˚F. Line two large baking sheets with parchment or lightly grease.
  • In a large bowl, beat together butter, sugar, and brown sugar until smooth and creamy. Beat in the egg, then the lime zest and juice and vanilla extract.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add to the butter mixture just until combined. Gently fold in the chocolate chips.
  • Form the dough into 1 inch balls and place on prepared baking sheets 2 inches apart. Bake in preheated oven until set and the edges are beginning to turn golden, 10-12 minutes. Let rest on the pan for 5 minutes before removing to wire rack to cool to room temperature.
