If using a long stranded pasta that is difficult to work with, chop into more manageable pieces.
In a large bowl, beat the eggs. Whisk in salt, pepper, and Parmesan. Mix in the pasta.
Heat a broiler-safe 10 inch saute pan over medium heat with the 1/4 cup olive oil.
Once thoroughly heated, pour half the egg mixture into the pan. Cover with the soft cheese slices and top with remaining egg mixture.
Stir the mixture occasionally with a wooden spoon until the bottom is golden brown, 15-20 minutes. Place the pan under the broiler and heat until the top is golden. Serve immediately.
