  • 4 cups cooked pasta
  • 8 eggs
  • salt and pepper to taste
  • 1/2 cup grated Parmesan
  • 1/4 cup olive oil
  • 8 ounces soft cheese Taleggio, Gouda, sliced


  • If using a long stranded pasta that is difficult to work with, chop into more manageable pieces.
  • In a large bowl, beat the eggs. Whisk in salt, pepper, and Parmesan. Mix in the pasta.
  • Heat a broiler-safe 10 inch saute pan over medium heat with the 1/4 cup olive oil.
  • Once thoroughly heated, pour half the egg mixture into the pan. Cover with the soft cheese slices and top with remaining egg mixture.
  • Stir the mixture occasionally with a wooden spoon until the bottom is golden brown, 15-20 minutes. Place the pan under the broiler and heat until the top is golden. Serve immediately.
