  • 1 tablespoon salt
  • 3 medium potatoes peeled and cut into thin strips
  • 2 tablespoons vegetable oil
  • 1 large red bell pepper seeded and cut into thin strips
  • 1 onion thinly sliced
  • 4 cloves garlic minced
  • 4 tablespoons soy sauce
  • 1 tablespoon sugar


  • 2 green onions thinly sliced


  • Fill a large bowl with water and stir in salt. Add the sliced potatoes and let soak for 10 minutes.
  • Heat a large wok or pan over medium high heat.
  • Drain the potatoes from the water and pat the slices dry to remove any excess moisture.
  • Drizzle the heated wok with oil. Add the potatoes and stir-fry for about 3 minutes. Stir in the thinly sliced peppers and cook, stirring often, until the peppers soften and the potatoes begin to turn golden. Stir in the onion slices and garlic. Cook until the garlic turns fragrant, 30 seconds-1 minute.
  • Add the soy sauce and sugar, tossing to coat. Cook, stirring often, until the potatoes are tender and crisp on the outside.
  • Serve immediately topped with green onions.
