  • 2 cloves garlic finely minced
  • 1/4 cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/3 cup extra virgin olive oil
  • salt and pepper to taste


  • Place the garlic in a medium bowl. Whisk in the red wine vinegar, lemon juice, and oregano. Continue whisking vigorously as you add the olive oil in a steady stream. Season with salt and pepper. Serve immediately or refrigerate for up to a week.
