Preheat the oven to 350˚F. Line a 12-cup muffin tin with paper baking cups.
In a medium bowl, whisk together the sweetened condensed milk, coconut flakes, egg yolks, cheese (if using), and almond extract.
Fill the baking cups two-thirds full with batter. Clean off any stray drips from the baking pan with a wet paper towel.
Bake for 18 to 20 minutes, or until set and the top is golden. Remove from the oven.
Serve warm, at room temperature, or chilled.
