Agua de Fresa (Mexican Strawberry Water)

Ingredients

  • 1 pound (450 grams) fresh strawberries
  • 1/2 cup (100 grams) granulated sugar
  • 5 cups (1.15 liters) cold water divided

Optional toppings:

  • Lime wedges
  • Fresh mint
  • Chopped strawberries
  • Ice

Instructions

  • Hull the strawberries, then cut them into quarters. Place in a large bowl. Toss with 1/2 cup (100 grams) sugar and 1/2 cup (120 milliliters) of the water.
  • Cover and refrigerate 1-2 hours.
  • Transfer strawberries to blender and puree until smooth.
  • Place a large wire sieve over a large bowl and pour in pureed strawberries. Use a spoon to help push liquid through. Discard remaining seeds.
  • Stir remaining 4 1/2 cups (1 liter) water into the strained strawberries. Adjust sweetness as desired.
  • Chill in refrigerator until ready to serve.
  • Immediately before serving, add ice, lime wedges, fresh mint, and/or chopped strawberries if desired.
