Almond Cardamom Syrup

A recipe for Almond Cardamom Syrup! This homemade simple syrup is flavored with almond extract and green cardamom pods for a comforting addition to a variety of drinks.

Ingredients

  • 25 green cardamom pods
  • 1 cup (240 milliliters) water
  • 3/4 cup (150 grams) granulated sugar
  • 1/4 cup (50 grams) packed light brown sugar
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract

Instructions

  • In a mortar and pestle or on a cutting board with the side of a knife, lightly crush the cardamom pods until the seeds are exposed.
  • Place a medium saucepan over medium heat.
  • Once hot, add the crushed cardamom and toast, stirring often, until fragrant, 1-2 minutes.
  • Carefully pour in the water, then stir in the granulated sugar and brown sugar.
  • Bring the mixture to a simmer and cook, stirring occasionally, until the liquid slightly thickens and all the sugar has dissolved, about 10-15 minutes.
  • Remove the pan from heat and stir in the almond and vanilla extracts.
  • Cover the saucepan and set aside at room temperature for 30 minutes to allow the flavors to blend.
  • Strain the syrup through a fine mesh sieve into a jar. Cool to room temperature, then refrigerate for up to 2 weeks. The flavors are even better after a day or two.
