Ingredients

  • 1 1/2 cups (190 grams) all-purpose flour
  • 1/4 cup (27 grams) dark cocoa powder
  • 3 tablespoons (37 grams) packed light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (177 milliliters) buttermilk
  • 1/4 cup (60 grams) plain yogurt
  • 4 tablespoons (60 grams) unsalted butter melted and slightly cooled, plus more for brushing the waffle iron
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 6 ounces (170 grams) dark chocolate finely chopped

Optional Toppings:

  • Strawberry preserves
  • Whipped Cream
  • Cacao nibs
  • Chocolate sprinkles

Instructions

  • Preheat the waffle iron to high heat.
  • In a large bowl, combine the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt.
  • Make a well in the center and add the buttermilk, yogurt, butter, eggs, and vanilla extract.
  • Gently mix until no streaks of flour remain.
  • Gently fold in the bittersweet chocolate.
  • Brush the heated waffle iron with butter. Add batter to the waffle iron, amount based on size of iron.
  • Heat until set and fluffy. Transfer to plate and repeat with remaining batter.
  • Serve immediately topped with whipped cream, strawberry preserves, cacao nibs, or your favorite toppings.
