- 1 cup (240 milliliters) canned coconut milk
- 1/2 cup (120 milliliters) rice milk sometimes labeled rice drink
- 1/2 cup (120 milliliters) passion fruit juice
- 1/2 cup (80 grams) chopped watermelon
- 1/2 cup (80 grams) frozen pineapple chunks
- 2 tablespoons (30 milliliters) fresh lime juice
- 2 tablespoons (30 grams) coconut cream
- 2 tablespoons (25 grams) granulated sugar
- 1 teaspoon vanilla extract
- 1-2 cups (150-300 grams) ice cubes
- 2-3 drops Blue gel food coloring
In a blender, add the coconut milk, rice milk, passion fruit juice, watermelon, pineapple, lime juice, coconut cream, sugar, and vanilla extract.
Top with desired amount of ice and 2-3 drops blue food coloring. Blend until smooth.
Serve immediately.
