Ingredients

  • 1 cup (240 milliliters) canned coconut milk
  • 1/2 cup (120 milliliters) rice milk sometimes labeled rice drink
  • 1/2 cup (120 milliliters) passion fruit juice
  • 1/2 cup (80 grams) chopped watermelon
  • 1/2 cup (80 grams) frozen pineapple chunks
  • 2 tablespoons (30 milliliters) fresh lime juice
  • 2 tablespoons (30 grams) coconut cream
  • 2 tablespoons (25 grams) granulated sugar
  • 1 teaspoon vanilla extract
  • 1-2 cups (150-300 grams) ice cubes
  • 2-3 drops Blue gel food coloring

Instructions

  • In a blender, add the coconut milk, rice milk, passion fruit juice, watermelon, pineapple, lime juice, coconut cream, sugar, and vanilla extract.
  • Top with desired amount of ice and 2-3 drops blue food coloring. Blend until smooth.
  • Serve immediately.
