Guinness Reduction Dipping Sauce

- 2 cups (470 milliliters) Guinness
- 2 cups (400 grams) light brown sugar
- Olive oil for serving
In a medium saucepan, whisk together Guinness and brown sugar over medium heat.
Once it begins to bubble, reduce heat to low and simmer, stirring occasionally, until reduced by half, 45-60 minutes.
Remove from heat and allow to cool to room temperature. It will thicken further as it cools.
Once room temperature, store refrigerated in an airtight container for up to 1 week.
Serve with a small bowl for dipping with equal parts olive oil.
