Peach Red Wine Vinaigrette

Ingredients

  • 2 peaches about 8 ounces (227 grams), ripened
  • 2/3 cup (160 milliliters) olive oil
  • 1/4 cup (60 milliliters) red wine vinegar
  • 1 tablespoon (15 milliliters) honey
  • 1 clove garlic peeled
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  • Cut the peaches in half lengthwise and remove the pits.
  • Place a cast iron grill pan over medium heat.
  • Once hot, add the peaches, cut side down, and grill until softened with golden grill marks.
  • Remove the peach halves to a plate and allow to cool briefly.
  • Transfer the slightly cooled peach halves to a high powered blender. Add the olive oil, red wine vinegar, honey, garlic, salt, and pepper.
  • Blend until smooth, then adjust seasonings to taste.
  • Drizzle the vinaigrette over desired salad or transfer to an airtight container and refrigerate for up to three days.
