- 2 peaches about 8 ounces (227 grams), ripened
- 2/3 cup (160 milliliters) olive oil
- 1/4 cup (60 milliliters) red wine vinegar
- 1 tablespoon (15 milliliters) honey
- 1 clove garlic peeled
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Cut the peaches in half lengthwise and remove the pits.
Place a cast iron grill pan over medium heat.
Once hot, add the peaches, cut side down, and grill until softened with golden grill marks.
Remove the peach halves to a plate and allow to cool briefly.
Transfer the slightly cooled peach halves to a high powered blender. Add the olive oil, red wine vinegar, honey, garlic, salt, and pepper.
Blend until smooth, then adjust seasonings to taste.
Drizzle the vinaigrette over desired salad or transfer to an airtight container and refrigerate for up to three days.
