Ingredients

  • 1 1/2 cups (190 grams) all-purpose flour
  • 2 tablespoons (25 grams) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cups (80 grams) chopped fresh strawberries
  • 2 large eggs
  • 3/4 cup (180 milliliters) buttermilk
  • 4 tablespoons (60 grams) unsalted butter melted and slightly cooled, plus more for greasing the waffle iron
  • 1 teaspoon vanilla extract

Instructions

  • Preheat waffle iron according to manufacturer's instructions.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg.
  • Toss in the chopped strawberries until well coated in the flour.
  • In a medium bowl, whisk together the eggs, buttermilk, butter, and vanilla. Mix the wet ingredients into the flour mixture until just combined.
  • Grease heated waffle iron with butter. Add enough batter to fill the iron and cook until golden and heated through the middle. Repeat with remaining batter.
  • Serve warm and top with desired garnishes.
