Lemon Dijon Dressing: 1/4 cup (60 milliliters) freshly squeezed lemon juice 2 tablespoon (30 milliliters) olive oil 2 teaspoons Dijon mustard 1 teaspoon granulated sugar 1 garlic clove peeled and finely minced 1/4 teaspoon salt 1/8 teaspoon freshly ground black pepper To Assemble: 4 large heirloom tomatoes Fresh basil leaves for garnish Freshly ground black pepper
To make the Lemon Dijon Dressing: In a medium jar, add the lemon juice, olive oil, Dijon mustard, granulated sugar, garlic, salt, and pepper.
Seal the jar and shake well for about 30 seconds to blend together the ingredients.
Adjust flavors to taste and set aside while you prepare the tomatoes. If not using immediately, place in the refrigerator.
To assemble the Tomato Salad: Cut the tomatoes crosswise into 1/4 inch (6 millimeter) thick slices.
On a serving platter or among individual plates, arrange the tomato slices. Alternate the slices if the tomatoes are different colors.
Whisk the salad dressing briefly to bring back together and pour over the tomato slices to taste.
Serve immediately garnished with basil leaves and additional black pepper if desired.
