Tomato Salad with Lemon Dijon Dressing

Ingredients

Lemon Dijon Dressing:

  • 1/4 cup (60 milliliters) freshly squeezed lemon juice
  • 2 tablespoon (30 milliliters) olive oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon granulated sugar
  • 1 garlic clove peeled and finely minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

To Assemble:

  • 4 large heirloom tomatoes
  • Fresh basil leaves for garnish
  • Freshly ground black pepper

Instructions

To make the Lemon Dijon Dressing:

  • In a medium jar, add the lemon juice, olive oil, Dijon mustard, granulated sugar, garlic, salt, and pepper.
  • Seal the jar and shake well for about 30 seconds to blend together the ingredients.
  • Adjust flavors to taste and set aside while you prepare the tomatoes. If not using immediately, place in the refrigerator.

To assemble the Tomato Salad:

  • Cut the tomatoes crosswise into 1/4 inch (6 millimeter) thick slices.
  • On a serving platter or among individual plates, arrange the tomato slices. Alternate the slices if the tomatoes are different colors.
  • Whisk the salad dressing briefly to bring back together and pour over the tomato slices to taste.
  • Serve immediately garnished with basil leaves and additional black pepper if desired.
