Berry Yogurt Popsicles

Ingredients

  • 1 cup (240 grams) Greek yogurt
  • 1 cup (237 milliliters) milk
  • 2 tablespoons (45 grams) honey to taste
  • Zest from 1 lemon
  • 1/2 teaspoon (2.5 milliliters) vanilla extract
  • 3 ounces (85 grams) fresh blueberries
  • 3 ounces (85 grams) hulled and diced fresh strawberries

Instructions

  • In a medium bowl with a spout, whisk together the yogurt, milk, honey, lemon zest, and vanilla extract.
  • In a small bowl, toss together the blueberries and diced strawberries.
  • Sprinkle a few berries into the bottom of each popsicle mold. Pour in enough yogurt mixture to fill the molds to the halfway point.
  • Add more berries, then top with the remaining yogurt mixture. Gently tap the molds on the counter to remove any excess air bubbles.
  • Cover the molds with the tops/popsicle sticks and freeze until firm, 4 hours to overnight.
  • Serve chilled.
