A recipe for Boardwalk Fries! These twice-fried fries are served hot with a sprinkling of salt, apple cider vinegar, and optionally Old Bay Seasoning.

Ingredients
2tablespoons(30 grams) salt
4cups(1 liter) warm water
4large russet potatoes
Peanut oil for frying
For serving:
Apple cider vinegar
Salt
Old Bay Seasoningoptional
Instructions
In a large bowl, mix the salt into the warm water until dissolved.
Cut the potatoes lengthwise into 1/4 inch (6 millimeter) thick strips. Cut each slice into 1/4 inch (6 millimeter) thick fries.
Place the potato strips in the salted water. If not completely covered, add a little more water. Allow to soak for 30 minutes to 1 hour at room temperature.
Line a large baking sheet with paper towels and set aside.
Fill a deep pot with about 3 inches (7.5 centimeters) of peanut oil. Heat the oil to 325˚F (165˚C).
Drain the potato strips and thoroughly pat dry. Add the fries to the heated oil in batches, being careful not to overcrowd.
Cook just until starting to brown, about 3-5 minutes.
Transfer the fries using a slotted spoon or tongs to the towel-lined baking sheet. Repeat with the remaining fries.
Once all the fries have been cooked, bring the oil up to 375˚F (190˚C).
Add the first set of cooked fries and fry until golden and crisp, 1-2 minutes. Remove to towel-lined baking sheet. Repeat with the remaining fries.
Toss the twice-fried fries as desired with salt, vinegar, and optionally the Old Bay Seasoning. Serve immediately.
