Ingredients

  • 1 cup (250 grams) plain Greek yogurt
  • Zest from 1 lemon plus more for garnish
  • 1 1/2 tablespoons (22 milliliters) freshly squeezed lemon juice
  • 1-2 tablespoons (15-30 milliliters) honey
  • 1 teaspoon vanilla extract
  • 1 cup (100 grams) granola
  • 1/2 cup (80 grams) fresh blueberries
  • fresh mint for garnish, optional

Instructions

  • Place the Greek yogurt in a small bowl.
  • Fold in the lemon zest, lemon juice, honey, and vanilla extract.
  • Adjust seasonings to taste.
  • In serving glasses or small bowls, layer the yogurt with the granola and blueberries.
