- 8 ounces (227 grams) fresh strawberries hulled
- 2/3 cup (160 milliliters) olive oil
- 1/4 cup (60 milliliters) balsamic vinegar
- 2 tablespoons (15 grams) finely chopped shallots
- 1 tablespoon (15 milliliters) honey
- 1/2 tablespoon Dijon mustard
- 1/4 teaspoon fine salt
- 1/8 teaspoon freshly ground black pepper
Place the strawberries, olive oil, balsamic vinegar, shallots, honey, Dijon mustard, salt, and pepper in a blender.
Blend until smooth, then adjust seasonings to taste.
Drizzle the vinaigrette over desired salad or transfer to an airtight container and refrigerate for up to three days.
