6 ounces (170 grams) fresh strawberries hulled and diced 1 tablespoon (12 grams) granulated sugar 1 vanilla bean or 1 teaspoon vanilla extract/vanilla bean paste 1 tablespoon (15 milliliters) freshly squeezed lemon juice 2 cups (480 grams) plain Greek yogurt cold 4-6 tablespoons (50-75 grams) granulated or turbinado sugar for sprinkling over the top
In a large bowl, combine the diced strawberries and 1 tablespoon (12 grams) granulated sugar.
Split the vanilla bean in half and scrape the seeds into the bowl with the strawberries.
Toss with lemon juice and set aside at room temperature for 20 minutes.
Mix in the Greek yogurt and divide the mixture among four small ramekins. Smooth the tops with the back of a spoon.
Cover one of the tops of the ramekins with about 1-1 1/2 tablespoons sugar to coat in a thin layer. Immediately caramelize using a blowtorch.
Repeat with remaining ramekins and serve immediately.
