Strawberry Vanilla Yogurt Brûlée

Ingredients

  • 6 ounces (170 grams) fresh strawberries hulled and diced
  • 1 tablespoon (12 grams) granulated sugar
  • 1 vanilla bean or 1 teaspoon vanilla extract/vanilla bean paste
  • 1 tablespoon (15 milliliters) freshly squeezed lemon juice
  • 2 cups (480 grams) plain Greek yogurt cold
  • 4-6 tablespoons (50-75 grams) granulated or turbinado sugar for sprinkling over the top

Instructions

  • In a large bowl, combine the diced strawberries and 1 tablespoon (12 grams) granulated sugar.
  • Split the vanilla bean in half and scrape the seeds into the bowl with the strawberries.
  • Toss with lemon juice and set aside at room temperature for 20 minutes.
  • Mix in the Greek yogurt and divide the mixture among four small ramekins. Smooth the tops with the back of a spoon.
  • Cover one of the tops of the ramekins with about 1-1 1/2 tablespoons sugar to coat in a thin layer. Immediately caramelize using a blowtorch.
  • Repeat with remaining ramekins and serve immediately.
