Preheat oven to 350˚F (180˚C). Line two baking sheets with parchment or lightly grease.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment or a large bowl, beat together the butter, granulated sugar, and brown sugar until light and creamy.
Beat in the egg, followed by the lime zest, lime juice, and vanilla extract.
Add the flour mixture and beat just until combined with no streaks of flour remaining.
Gently fold in the white chocolate chips.
Form the dough into 1 inch (2.5 centimeter) rounds and place on the prepared baking sheets 2 inches (5 centimeters) apart. Use your palm to very lightly press down on each round to form a thick disc.
If desired, top each disc with 2-3 more white chocolate chips and a small sprinkle of lime zest.
Bake the White Chocolate Lime Cookies in the preheated oven until set and the edges are beginning to turn golden, 10-12 minutes.
Allow to rest on the baking sheets for 5 minutes before removing to wire rack to cool to room temperature.
