Watermelon Yogurt Smoothie

A recipe for a Watermelon Yogurt Smoothie! Blended watermelon is layered with yogurt for a light and refreshing drink.

This Watermelon Yogurt Smoothie is a quick and easy use for fresh watermelon all summer long! I first came across the idea over on Umami Days after looking for ideas to use up some leftover watermelon I had in the refrigerator.

Simply pulse watermelon with lime juice, sugar, and ice in a blender. Layer the watermelon with lime and vanilla flavored yogurt for a more vibrant presentation and to help show off the colors.

Garnish the glasses with watermelon wedges, lime slices, and/or fresh mint before serving immediately.

A Few Watermelon Yogurt Smoothie Tips

This recipe is best made with ripe watermelon at peak season. It can also be made with frozen watermelon (add less or no ice).

If using a watermelon with black seeds, remove and discard the seeds before adding the chopped watermelon to the blender.

Use plain yogurt to layer with the blended watermelon. Greek yogurt will be too thick and heavy. If you only have Greek yogurt available, mix some milk into the yogurt before using to thin.

Add more or less ice as desired to adjust the texture of the watermelon layers.

Adjust the sugar to taste. I generally use around 2 tablespoons (25 grams). The exact amount will depend on personal taste and the sweetness of the watermelon. I did not add sugar to the yogurt since I was mixing everything together, but feel free to toss in a tablespoon or even a drizzle of honey.

Serve the Watermelon Yogurt Smoothie immediately after assembling. The ingredients will start to separate with time.

Watermelon Yogurt Smoothie

Ingredients

Yogurt Layer:

  • 1 cup (250 grams) plain yogurt
  • Zest from 1 lime plus more for garnish
  • 1/2 teaspoon vanilla extract

Watermelon:

  • 3 cups (560 grams) diced seedless watermelon
  • 2 tablespoons (25 grams) granulated sugar
  • Juice from 1 lime
  • 2 cups (280 grams) ice
  • Watermelon wedges for garnish
  • Lime slices for garnish
  • Fresh mint sprigs for garnish

Instructions

To make the yogurt:

  • In a medium bowl, fold together the yogurt, lime, and vanilla extract. Set aside or cover and refrigerate for up to a day.

To assemble:

  • In a blender, combine the watermelon, sugar, and lime juice.
  • Blend until smooth, then taste and adjust lime juice and sugar as needed.
  • Add the ice and pulse until blended.
  • Pour about 1/4 cup (60 milliliters) of the watermelon mixture into each glass. Top with large spoonfuls of the yogurt, making sure some of it touches the edge of the glass. Alternate with more watermelon and yogurt to layer.
  • Top with an additional small sprinkle of lime zest if desired. Garnish with watermelon wedges, lime slices, and/or mint sprigs.
  • Serve immediately, stirring together the layers before drinking.
