Today I am featuring Cook at Home’s recipe for Peanut Butter Granola for the Food Bloggers Recipe Swap! 

Sarah, the blogger behind Cook at Home features gluten-free and often dairy-free recipes. She especially loves the combination of chocolate and peanut butter. Sarah has a wide variety of recipes to choose from on her site and I also pinned Maple Crumb Cupcakes, Cilantro Lime Salmon, and Lemon Coconut Slice for later.

Peanut Butter Granola

I was so excited to come across this recipe for homemade Peanut Butter Granola on Sarah’s site. I am always trying to find quick and easy breakfast ideas and this granola definitely fits in the category by coming together in less than 20 minutes! It only has five ingredients too!

Warmed peanut butter and honey are seasoned with cinnamon and vanilla, then the mixture is whisked until smooth to create a flavorful coating for the oats. Once everything is thoroughly combined, the oats are baked in a single layer on a baking sheet for about 8 minutes.

As the granola cools to room temperature, it will develop a crunchy texture perfect for pairing with yogurt, fresh fruit, or simply on its own.

A Few Tips

Used old fashioned (rolled oats) for the granola. Other types will not develop the crisp texture.

Before combining with the oats, warm the peanut butter and honey slightly in the microwave (or a small saucepan on the stove) until runny. This will help coat the oats more evenly.

Check the ingredients on your peanut butter. If it is purely peanut butter with no other additives, you may want to add a very small pinch (about 1/8 teaspoon) of salt to the mixture.

The granola should develop a crisp texture after cooling to room temperature. If it is still too soft, stir and place back in the oven for a couple more minutes. Keep a close eye on the granola towards the end of cooking. It will quickly turn from lightly golden to burnt.

We especially enjoyed pairing the Peanut Butter Granola with yogurt (plain or vanilla), fresh berries, and chocolate chips. Other delicious options include toasted coconut, sliced bananas, chopped peanuts or almonds, mini marshmallows, or as a part of a smoothie bowl.

This recipe can easily be doubled. Store leftovers in an airtight container at room temperature for up to 2 weeks.

If tossing chocolate chips and other ingredients with the granola, make sure it has completely cooled to room temperature first.

Ingredients

  • 2 tablespoons (30 grams) creamy peanut butter
  • 2 tablespoons (30 milliliters) honey
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 cup (90 grams) old fashioned oats (rolled oats)

Instructions

  • Preheat oven to 350˚F (180˚C). Line a rimmed baking sheet with parchment or lightly grease.
  • In a large microwave-safe bowl, combine the peanut butter and honey. Microwave until softened enough to whisk until smooth, about 20 seconds. Stir in the cinnamon and vanilla extract. Fold in the oats until well-coated.
  • Spread the oats in an even layer on the prepared baking sheet. Bake in preheated oven until lightly golden, about 8 minutes. Cook until room temperature and crisp before storing in an airtight container.

      Yep 🙂 That is what I used. Heating it with the honey helps smooth it out to coat the oats.
