The Lassi is a North Indian yogurt-based smoothie used to combat the heat, in foods and outside. The most popular flavors are salty and sweet, with spices or fruits occasionally added. This particular lassi is created by blending yogurt with strawberries, cardamom, and a splash of rosewater. It is light, refreshing, and a perfect way to counteract the rising summer temperatures.

The rosewater is optional. I actually came across this recipe in an effort to use up a previously opened bottle. I did enjoy the floral element it brought to the drink. Rose water is becoming more available in larger grocery stores. You can also try international markets featuring Middle Eastern or Mediterranean ingredients. If you don’t have these options, it is available on Amazon: Cortas Rose Water, 10-Ounce Bottles (Pack of 4).
Instead of sugar, you can use honey to sweeten the lassi.
Frozen strawberries can be used instead of fresh.
Strawberry Cardamom Lassi
Adapted from Honest Cooking- Manali Singh
Serves 2
1 cup pureed strawberries
3/4 cup plain yogurt
1/2 cup milk
1-2 pinches ground cardamom
1/4 teaspoon rose water (optional)
Sugar to taste, 2-3 tablespoons
In a large blender, combine strawberry puree, yogurt, milk, cardamom, and rose water. Blend until smooth.
Add sugar to taste, 2-3 tablespoons, and blend.
Serve immediately, chilled, or with ice.
