Strawberry Cardamom Lassi

A recipe for Strawberry Cardamom Lassi! This refreshing drink comes together easily with a blend of strawberries, yogurt, cardamom, and rose water.

Lassi is an Indian yogurt-based drink perfect for combating warm summer temperatures and complementing spicy foods.

In the United States, the Mango Lassi may be the most popular, but there are so many amazing variations and flavors, often with the addition of fruit and spices. A few favorites include my Spiced Orange Lassi, Rose Lassi from Whisk Affair, and Salted Lassi from Healing Tomato.

In this Strawberry Cardamom Lassi, fresh strawberries are blended with milk, yogurt, cardamom, rose water, ice, and a little bit of sugar until smooth, creamy, and a beautiful pink color. Overall, the drink comes together in about 10 minutes (5 if you work quick or the strawberries are already hulled) with only a handful of ingredients.

Serve the Strawberry Cardamom Lassi immediately after blending. The mixture will start to separate and the ice will melt the longer the drink sits.

I kept the drink simple, but sliced strawberries and/or fresh mint sprigs would be beautiful as garnishes.

Notable Ingredients

Rose water is created by collecting the liquid from distilled roses. I have been able to locate it in markets (make sure it is culinary rose water) with Middle Eastern and South Asian ingredients and some larger grocery stores.

The rose water is strong and a little splash goes a long way. Adjust between 1/4 teaspoon and 1/2 teaspoon as desired.

Green Cardamom is a highly aromatic, warm citrus-like spice. You can buy cardamom whole or ground, but the seeds quickly lose their flavor once the pods are cut.

I have been able to find the pods in the spice section of larger grocery stores and specialty spice stores/International Markets featuring South Asian products.

For those in Northern Virginia, I usually get both of these ingredients at Lotte Plaza Market in Chantilly.

A Few Strawberry Cardamom Lassi Tips

I used plain whole milk yogurt in this recipe. If using a thicker yogurt, more milk may be required to smoothly blend everything together.

If using frozen strawberries, omit the ice.

For an extra cold drink, place the glasses in the freezer before using.

Adjust the amount of sugar as desired and based on the quality of strawberries. During peak season, I usually add about 2 tablespoons and will increase to 3 tablespoons if they are not as sweet.

The sugar can be swapped for honey or another preferred sweetener.

If the mixture is too thin, add a little more ice or yogurt. If too thick, add a splash or two of milk.

This recipe can easily be doubled for more servings if you have a large blender.

Ingredients

  • 8 ounces (227 grams) fresh strawberries hulled and roughly chopped
  • 1/4 cup (60 milliliters) milk
  • 1 cup (250 grams) plain whole milk yogurt
  • 2 tablespoons (25 grams) granulated sugar
  • 1/4-1/2 teaspoon rosewater
  • 1/4 teaspoon ground cardamom
  • 1 cup (150 grams) ice

Instructions

  • Place the strawberries, milk, yogurt, rose water, cardamom, sugar, and ice in a blender.
  • Blend until the mixture is evenly combined and smooth.
  • Serve immediately, adjusting the spices and sugar as desired.
