Pineapple Orange Coconut Smoothie

A recipe for a Pineapple Orange Coconut Smoothie! This quick and easy smoothie pairs pineapple and orange pieces with coconut milk, bananas, and yogurt for quite the refreshing drink.

This Pineapple Orange Coconut Smoothie is such a refreshing way to use up leftover pineapple and oranges for breakfast or a light snack.

Peeled and roughly chopped oranges are blended until smooth with a combination of coconut milk, bananas, frozen pineapple chunks, yogurt, ice, honey, and a splash of vanilla.

Everything comes together in less than 10 minutes with very minimal prep. The longest part is simply peeling the oranges.

Toasted Coconut Rim

Before serving, I rimmed the glasses for the smoothie with toasted coconut flakes to add to the presentation.

To toast the coconut flakes, preheat an oven to 325˚F (160˚C). Arrange the flakes in a thin, even layer on a baking sheet. Bake just until toasted, 5-10 minutes, stirring occasionally to evenly brown. Keep an eye on the coconut flakes, because they will quickly go from toasted to burnt.

I dipped the top of each glass in a thin layer of honey, then coated evenly in the toasted and cooled coconut flakes.

A Few Pineapple Orange Coconut Smoothie Tips

The measurements listed are mostly just guidelines. Adjust the honey to taste. It can also be swapped for another favorite sweetener or sugar if desired.

Start with one cup (150 grams) of ice and add more as needed for a light and creamy texture.

If the mixture is too thick to blend, add a little more coconut milk. If thinner than desired, add a little more pineapple or ice.

I used plain whole milk yogurt in this recipe. If making with a thicker yogurt, more coconut milk may be required to smoothly blend everything together.

The splash of vanilla extract is optional, but I love the hint of vanilla. You can skip it and simply use a vanilla-flavored yogurt.

Use frozen bananas for an even more creamy and thick texture.

Serve the Pineapple Orange Coconut Smoothie immediately after blending. The ingredients will start to separate and the ice will melt with time.

Ingredients

  • 2/3 cup (160 milliliters) coconut milk
  • 3 oranges peeled and roughly chopped
  • 3 ounces (90 grams) frozen pineapple chunks
  • 2 bananas peeled and roughly chopped
  • 1/2 cup (125 grams) plain yogurt
  • 2 tablespoons (30 milliliters) honey
  • 1 teaspoon vanilla extract
  • 1 cup (150 grams) ice cubes

Garnish:

  • Orange Zest
  • Toasted Coconut Flakes

Instructions

  • In a large blender, add the coconut milk, oranges, pineapple, bananas, yogurt, honey, vanilla, and ice.
  • Blend until smooth and creamy.
  • Serve immediately, garnished with orange zest and toasted coconut flakes if desired.

    sounds delicious and healthy but my kids were not drinking it cuz of soar taste but i enjoyed
