Cabbage, Carrot and Pear Salad (2 of 3)

This Napa Cabbage, Asian Pear, and Carrot Salad is simple and easy to throw together with refreshing flavors. I wrote a bit about Asian pears in my Dakkochi post. I really enjoyed the crisp texture they brought to the salad and their sweetness. The dressing nicely compliments the cabbage, pear, and carrots. This salad makes a great starter to an Asian-inspired meal. I served it with Dak Bulgogi- which I will post in a few days.

I used this Messermeister Pro Touch Julienne Cutter to slice the carrots. It works very efficiently to get uniform strips without much labor.

Cabbage, Carrot and Pear Salad (1 of 3)

Napa cabbage (Nappa, Chinese, Celery Cabbage) is a common ingredient in Chinese, Korean, and Japanese cooking. It was originally grown near Beijing, China and is a long, oval cabbage with a light greenish yellow color. I have been able to find it at most grocery stores and Asian markets in my area.

Napa Cabbage, Asian Pear, and Carrot Salad

Ingredients

  • 4 cups shredded Napa cabbage
  • 2 carrots peeled and julienned
  • 1 Asian pear peeled and sliced into matchsticks

Dressing:

  • 3 tablespoons vegetable oil
  • 2 tablespoons rice vinegar
  • 2 teaspoons granulated sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • salt and pepper to taste

Garnishes:

  • Sliced almonds toasted
  • Sesame seeds

Instructions

  • In a small bowl, whisk together the dressing ingredients. Refrigerate for at least 30 minutes to let the flavors blend.
  • In a large bowl, combine cabbage, carrots, and Asian pear pieces. Toss with dressing. Top with almonds and sesame seeds.
