A recipe for Pumpkin Spice Parfaits! A spiced pumpkin mixture is layered with yogurt and granola for a delicious breakfast or light dessert.

These Pumpkin Spice Parfaits are such a fun and easy no-bake fall treat. It all comes together in about 15 minutes too.

Pumpkin puree is flavored with warming pumpkin pie spice and maple syrup, then layered with vanilla yogurt and crisp granola.

I topped each assembled parfait with a dollop of whipped cream, additional granola, and few fall-themed sprinkles.

This recipe is made with pure pumpkin puree, not pumpkin pie filling. Pumpkin puree contains simply cooked and pureed pumpkin.

Pumpkin pie spice is a spice mixture often comprised of cinnamon, ginger, nutmeg, cloves, and allspice. It can be found in the spice section of most American grocery stores, particularly in the fall. Savory Thoughts also has a great recipe for making Homemade Pumpkin Pie Spice.

I layered the Pumpkin Spice Parfaits with a store-bought maple almond butter granola. Use your favorite store-bought or homemade granola, preferably with fall flavors to complement the pumpkin and yogurt.

Another option would be to layer the parfaits with crushed graham crackers as I did in my Meyer Lemon Parfaits.

For quick assembly, the pumpkin filling and the Greek yogurt can be prepared ahead of time (up to 2-3 days) and refrigerated in airtight containers until needed. 

Adjust the amount of maple syrup to taste based on desired sweetness. It can also be swapped for equal amounts of honey.

If using smaller or thinner glasses to layer the Pumpkin Spice Parfaits, it usually helps to transfer the pumpkin and Greek yogurt into individual piping bags or use small spoons. This will help control the amount of each layer added and keep the edges of the glass clean.

The parfaits are best served immediately after assembling. With time, the granola will start to soak up the liquid and lose that contrasting texture.

Pumpkin Spice Parfaits

Ingredients

Vanilla Yogurt

  • 1 1/2 cups (350 grams) plain Greek yogurt
  • 1-2 tablespoons (15-30 milliliters) maple syrup
  • 1 teaspoon vanilla extract

Pumpkin Layer:

  • 1 1/2 cups (370 grams) pure pumpkin puree
  • 2 tablespoons (30 milliliters) maple syrup
  • 1 1/2 teaspoons pumpkin pie spice

To assemble:

  • 1-1 1/2 cups (100-150 grams) granola store-bought or homemade
  • Whipped cream for topping, optional
  • Fall sprinkles for topping, optional

Instructions

To make the Vanilla Yogurt:

  • In a medium bowl, whisk together the Greek yogurt with maple syrup to taste and vanilla extract. Cover and refrigerate until ready to assemble the Pumpkin Spice Parfaits.

To make the Pumpkin Layer:

  • In another medium bowl, whisk together the pumpkin puree, maple syrup, and pumpkin pie spice.
  • Whisk in 2 tablespoons (30 milliliters) of the vanilla yogurt mixture. Cover and refrigerate until ready to assemble.

To assemble:

  • Cover the bottom of four small serving glasses with a layer of granola.
  • Top with a layer of the vanilla yogurt.
  • Cover with a layer of the pumpkin mixture.
  • Continue to layer with granola, yogurt, and pumpkin until you reach the top of the glass with a final layer of pumpkin.
  • Serve the parfaits immediately with a dollop of whipped cream, additional granola, and sprinkles if desired.
