Horchata is a Mexican drink made from finely grinding uncooked white rice and mixing it with water, cinnamon, sugar, and vanilla. In Mexico, almonds, squash seeds, melons seeds, or milk are sometimes added. The idea was brought over by the Spaniards, who make Horchata with chufa (tigernuts).
This Strawberry Almond Horchata is now one of my favorite drinks. I love the addition of sliced strawberries (especially after they have been soaking in the horchata for a bit). I gave Evan some before adding the sugar and he also loved it.
Strawberry Almond Horchata

Strawberry Almond Horchata
Servings 2 -4 Servings
Ingredients
- 1 cup long grain white rice ground
- 1 cup blanched almonds
- 1 (4 inch) cinnamon stick
- 3 cups hot water
- 1/4 cup granulated sugar
- 3 cups milk
- 1 tablespoon vanilla extract
Garnish:
- Sliced Strawberries
Instructions
- In a medium bowl, combine ground white rice, almonds, and cinnamon stick. Add hot water, cover, and refrigerate overnight.
- Add the mixture to a blender and puree until smooth.
- Pour through a fine mesh strainer or cheesecloth into a large bowl. Use a spatula to press against the sides of the strainer to get more liquid. If desired, strain a second time. Remove the leftover solids.
- Whisk in the sugar, milk, and vanilla extract. Continue to whisk until sugar dissolves. Pour into glasses and serve with strawberry slices.
